Halloween Stuffed Peppers

Hello back my dearest readers!

As mentioned in the earlier post, today I am uploading 2 recipes, wow! So, here it is my second one, a main course: Halloween Stuffed Peppers! Really easy to make if you have people coming over tonight or tomorrow :)

By the way, if you do not have peppers, you can use tomatoes as a substitute.

Ingredients

2 orange or red peppers
1 cup of any type of rice
Water
1/2 cup of onion
1/2 cup of pepper
1/2 cup of zucchini
1/2 cup of mushrooms
10 grape tomatoes
1 garlic
Fresh oregano, thyme and mint
Salt and pepper
1/2 cup of mozzarella cheese

Directions

1. Preheat the oven to 180ºC.
2. In a pot put water to boil and then add the rice. Let it cook for 15 minutes, depending on the type of rice you add. I used multi-grain Chinese rice.
3. Wash the peppers, cut the top, remove the seeds and wash again. With a sharp knife (Careful! Do not cut yourself!) draw a scary face on the peppers and then cut it off.

4. In a pot boil some water and add the peppers. Let them boil for 5 minutes. Let it cool.
5. Cut all the vegetables, add the garlic and onion to the pan, then the zucchini. After some minutes, add the mushrooms and finally the peppers. Stir.

6. Add the salt, pepper and the rest of the spices to the vegetables stir.
7. Mix the rice with the vegetables, and add the cheese to the mix.

8. Stuff the peppers with the rice and vegetables mix.
9. Bake the peppers 5 minutes.
10. Take pictures of your cute peppers, serve them, EAT them!

I hope you have a great weekend and that enjoy Halloween.

See you soon,

Witch Miriam :)
