Easy Chocolate Cake with Berries

Hello everyone!

Every day is a new day, therefore a special day. Yet some days feel more special than others and today is a super special day. A special person is turning 23 years old, today, the 19th of June. I cannot do much since A is 6,400 km apart, but I wanted to show him that he is never forgotten. I should maybe create an app to send cakes as quick as it is to send a text message, but I have not realised yet how to create it... Oh, do not worry, I will happily eat the cake, hehe.

I have taken this recipe from Donna Hay's book: Off The Shelf. I have amended the recipe so that it is less caloric. I have substituted the sour cream for yogurt, and the chocolate glaze for fresh berries.



Ingredients

- 250 g. butter, room temperature

- 230 g. (or 1⅓ cups) brown sugar

- 3 medium eggs

- 300 g. (or 2 cups) plain all-purpose flour

- 16 g. (or 1½ teaspoons) baking powder 

- 35 g. (or ⅓ cup) cocoa powder

- 125 g. (or 1) yogurt

- 250 g. dark chocolate

- Some berries

- 200 ml. double cream


Directions

1. Preheat oven to 160°C. 

2. Mix the butter and sugar in a bowl with an electric mixer until it is creamy.


3. Add the eggs one by one and beat well.









4. Sift the flour, baking powder and cocoa, and add it to butter mixture.




















5. Melt the chocolate using a water bath.


6. Beat the yogurt and add it to the butter mixture. Also, add the melted chocolate into the mixture.












7. Mix until all ingredients are combined.


8. Grease with some butter a 22cm cake tin, better if it is a removable one.


9. Pour the mixture into the cake tin and bake for 1 hour. Remember all ovens are different and that yours might need more or less time to bake.

10. Once baked, let it cool in the tin, otherwise, there is a high possibility that it will break.

11. Whip double cream and keep it refrigerated. This will be served with the cake.

12. Decorate with berries, icing sugar, cocoa powder, chocolate glaze, etc.

 










 










13. EAT. It served 8 people, or only one if you cannot stop eating this delicious chocolate cake.

Spanish Fried Doughnuts (Roscos Fritos)

Hello everyone!

Today is National Doughnut Day and we are here to celebrate it with a delicious recipe. It is a Spanish one that runs in the family since the 30's.. :)


Ingredients

2 tablespoons grated lemon zest
4 medium eggs
125 g. of sugar
230 ml. (one glass) of of olive oil Virgin Extra
230 ml. (one glass) of fresh orange juice (if you lack of oranges, you can add one glass of milk)
1 tbsp of anise seeds
16 g. of baking powder
750 g. of flour
Sunflower oil to fry the doughnuts
Icing sugar

Directions

1. Put the oil in a pan and heat it up. Once it is really hot, let it cool down. We will need it to add it in the mix.

2. From the ingredients list, add one by one in a big bowl and mix. For instance, add the eggs in a big bowl and mix, then add the lemon zest and mix, add the anise seeds and mix, and so on.







3. Sift the flour and baking powder and add to the mix.


4. At some point you will see that it will be easier to mix the dough with your hands. You can use some oil for your hands.













5. Cover the dough and let it chill for an hour.

6. In a small bowl add some oil. Whenever you feel your hands are dry, wet your fingers in it, grab a small ball of dough, roll it into a robe and join the ends. 













7. In a pan/pot add enough sunflower oil to fry the doughnuts.










8. Once both sides have a golden colour, put the doughnuts in a plate with kitchen paper at the bottom. This will absorb the oil.

9. Deep the doughnut in icing sugar, or in chocolate, sugar glaze, etc.














10. EAT!

Strawberry Tart

Hello, Hello!

I want to share with you all today's recipe: a strawberry tart. It is quite simple, healthy, and it only takes about 25 minutes to elaborate.


Ingredients

1 and a half sheets of puff pastry
700 g. to 800 g. of strawberries
Half glass of water
1 egg
600 g. of pastry cream approximately - click here for recipe
Icing sugar for garnish (optional)


Directions

1. Preheat the oven to 175ºC.

2. Roll the first puff pastry, prick the base gently, you can do so using a fork.



3. Roll the second puff pastry, cut 8 parallel lines, about 1cm apart.



4. Paint with water one edge of the first puff pastry and then place a line of the second puff pastry on top of the edge. Using the fingers, press it slightly to seal.







5. Repeat the process with the 3 remaining edges/lines. Once finished, repeat this process again until all 8 lines are situated in the (first) puff pastry's edges. Trim the pastry that does not fit in the square (do not throw away the scraps, we can reuse them!).










6. Egg wash the edges using a pastry brush.













7. Fill the dough with baking chickpeas (or beans) and blind bake in the oven until the edges are golden - around 15 -20 minutes.











8. Remove the beans and paper, and leave it to cool on a wire rack.










9. Put the pastry cream into a pastry bag and fill the pastry homogeneously. - I always stand the pastry bag upright in a long drinking glass to fill it.























10. Wash the strawberries, dry, hull and slice them 0.5 cm thick.












11. Neatly, place the strawberries in an onverlapping linear pattern.











12. Decorate with some mint, chocolate, or simply dust it with powdered sugar.













13. Serve (EAT) it, or place it in the refrigerator until it is served.






In step number 5 I mentioned the pastry scraps. I used them as well as half puff pastry to make mini palmiers (recipe in Spanish here).
